 Hebe’s Vegan Taco Boats!
 Try out this healthy and delicious vegan meal!
Ingredients:
- 1 Bell pepper
 - 1 red onion
 - 1 Courgette
 - Chickpeas
 - Olive oil
 - 1 avocado
 - 1 tomato
 - 3 Taco Shells
 - Seasoning of your choice
 
Method:
- Grab your bell pepper and cut it up into small strips
 - Cut your red onions & courgette up into small chunks
 - Grab a large tray, and line with baking paper
 - Pour your chickpeas onto the tray and make sure they stay to one side of the tray to make room for the rest
 - After that, add all of your chopped up ingredients onto the tray
 - Drizzle olive oil over your chopped veg and chickpeas and then add seasoning of your choice
 - Place into the oven at 200 degrees until all of the ingredients are cooked well
 - In the meantime start to cut up your avocado into small strips and your tomato into slices
 - Finally once your vegetables have cooked, take them out of the oven and begin to assemble inside your taco shells
