 Simple Chicken Fried Rice
 Don't get us wrong, we all love a Chinese takeaway! However, if you're looking for a lower cal version then this recipe is just the thing to hit the spot.
Serves 2
- 2 chicken breasts
 - 1 chicken stock cube
 - 1 sachet of boil in the bag rice/1 microwaveable pouch
 - 100g frozen peas
 - 1 onion
 - 100g mushrooms
 - Light soy sauce
 - Garlic
 
- Cook your rice; either boil if using boil in the bag rice or microwave if using a pouch
 - Chop your onion, slice your mushrooms and dice the chicken
 - Cook your frozen peas
 - Spray a pan with frylight and add in onions with a little garlic for 2-3 mins
 - Add in your diced chicken breast
 - Once chicken is browned, add in mushrooms & peas
 - Crumble a stock cube in a mug and add some boiling water (roughly halfway)
 - Add stock mix to pan along with cooked rice
 - Keep stirring until all water is dissolved
 - Add a splash of soy sauce & serve
 - Enjoy!
